    We really enjoyed this hearty soup. Mindful of hbakke's comment, I used a mix of ground beef & sausage. I also used a big mix of peppers from my fridge & freezer (some sweet varieties and also some fresnos for heat). Since I was serving it with some lovely cheddar buttermilk biscuits, we decided that it didn't really need the rice and we certainly didn't feel that we missed it. I will make this soup again (and try it with the rice) for sure.

    Healthy tasting soup. The extra lean ground beef wasn't super flavorful, so I might use a higher fat ground beef next time. Overall this was a nice dinner.
