    This is my favorite pizza dough recipe in my bookshelf. It does require a bit of planning and a sourdough starter, although you could probably get away with a pre-ferment the night before of flour and water. it is the perfect balance of crispy and chewy. I did find a typo in my edition (it likely requires 80 (not 800) grams of oil) It makes 7 balls of dough, so you could freeze a few to preserve all of your effort.
