Can substitute mint for flat-leaf parsley; ground cloves for ground allspice; low-sodium meat broth for low-sodium vegetable broth; yellow onions for red onions; and green peppers, yellow peppers, or orange peppers for red peppers. See recipe for variation.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

We love this soup. I omitted the extra sugar and garnished with a squeeze of lemon so the soup had a slight sweet/sour flavor from the dried apricots. We did not find it too sweet.
