Maple coconut granola from Ready, Set, Cook: How To Make Good Food with What's On Hand (No Fancy Skills, Fancy Equipment, or Fancy Budget Required) (page 125) by Dawn Perry

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute walnuts or almonds for pecans, and olive oil or vegetable oil for unsalted butter.

We are huge fans of the NYT olive oil granola and this isn't quite as decadent but as the other poster noted, I appreciate this version that has less sugar and oil. It has the perfect amount of salt. I used pecans for the nuts and didn't use cereal because we didn't have any. We ate it, as suggested in the section about yogurt bowls, with plain yogurt, an apple and a bit of maple syrup and it was delicious. This simple and delicious breakfast is definitely going into our regular rotation.

This is delicious! It's like Nekisia Davis' olive oil and maple granola but less sweet and with half the fat, which I appreciate. It's still plenty sweet and highly addictive. This will become my go-to granola recipe.
