    I was gifted some truffle oil for Christmas and wanted to use it. Eat Your Books to the rescue! This was the one recipe that jumped out at me because I love lentils. I buy the steamed lentils from Trader Joe’s so all I had to do was add some olive oil, garlic and vinegar. I also keep servings of cooked farro in the freezer so that helped as well. I always resist using this book because of all the different components that have to be made but this recipe came together really quickly. The mushrooms were really great so I will be using that trick again. The only issue is that I can’t taste the truffle oil!
