    This was a lovely change of pace scalloped potato dish. It was much lighter than the traditional recipes but packed full of flavor from the spinach and red pepper. I used Gruyère cheese since that was what I had on hand and the flavor just added another dimension to the dish. I also added about 3 tablespoons of heavy cream to help thicken it.
