    Can substitute white onion for yellow onion, sugar or maple syrup for agave nectar, tamari or Bragg liquid aminos for soy sauce, red miso for umami powder, and the book's "Homemade "raw" ground beef" (P.193) for store-bought "raw" type vegan ground beef.

    exactly what it says on the tin, i usually use dried beans quick cooked in the instant pot and add a tablespoon of cocoa powder as well. works best with impossible ground or chipotle seitan
