Can substitute Arborio rice for carnaroli rice, vegetable broth for chicken broth, matzo crumbs for breadcrumbs, and peanut oil for sunflower oil. Can use the tomato sauce on pages 136 or 100, and the recipe can also be made with leftover risotto. See recipe for variations.
