    Thanks to the note another person left, we cooked it 25 minutes to reduce. We also drained a little bit of the rendered fat and that helped- my pork shoulder was way fatty. The chilis I had were not very hot and I would have liked it spicier, but that’s easy to adjust and I just added some chili garlic sauce on mine at the end. Also used a mix of soy sauce and fish sauce because my husband dislikes fish sauce. I did 1/3 fish 2/3 soy sauce. The family liked the dish, and it was not difficult to make. It is quite sweet.

    This was very good. I only used one serrano because I'm a little baby, but otherwise followed the recipe exactly. It took probably closer to 25 minutes to reduce the sauce on the pork, but it was worth it. We served with some rice and the sautéed corn with miso, butter and scallions from the same book, it worked really well.

    This recipe was wonderful and tasted decadent. It seemed almost too simple, but came together really well. I used Red Boat fish sauce, which I'd recommend. I did have to use regular water rather than coconut water, but the end product was still excellent. I'll make this again.
