South-Asian mashed potatoes (Aloo bharta) from Milk Street: The World in a Skillet (page 109) by Christopher Kimball

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute brown mustard seeds for yellow mustard seeds, and Fresno chiles for serrano chiles.

The flavor of this is awesome, I followed the recipe without any alterations. However, the method of boiling potatoes in a skillet until the water was gone was annoying. I looked up some other recipes and it seems like they all simply make mashed potatoes and mix in the other ingredients, still blooming the spices in oil and such. That’s how I will make it next time!
