    Can substitute neutral oil of your choice for grapeseed oil, and jalapeño chiles for Fresno chiles.

    Way too much liquid left, end up simmering with the lid off at the end for 10-15 minutes until it thickened. Looking at the recipe I think there was a mistake and it should have been 1 cup of quinoa, that makes more sense based on serving size
