Can substitute cremini mushrooms for white mushrooms, unsweetened plain oat milk or vegan half-and-half for the book's "Rich homemade cashew milk", white wine for vermouth, the book's "Homemade hard Parmesan" (P.236) or "Quickie nut Parm" (P.177) for store-bought vegan Parmesan, and nori for vegan fish sauce.
