Can substitute cremini mushrooms for white mushrooms, vegetable stock for vegan beef stock, tamari for soy sauce, waxy potatoes for baby potatoes, the book's "Charbroiled succulent steak" (P.188) for vegan beef strips, and cooked short-grain white rice or cooked brown rice for cooked rice.
