    I made my own grain and seed blend. Initially, the dough was a little sticky, but it formed a ball after being kneaded for a while in the stand mixer. It rose faster than expected - I feared it had overproofed, but it didn't collapse and produced a very tall loaf. The bread was soft, but with very nice texture from the grains. Easy to slice, good for sandwiches or toast.
