Can substitute extra virgin olive oil for ghee, and queso fresco for dairy-free feta cheese. Can use the "Red enchilada sauce" recipe or the "Green enchilada sauce" recipe on p.30, and the "Dairy-free sour cream" recipe on p.36.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Didn't love it. In the future, I wouldn't use plantain chips but a grain-free tortilla chip. It obviously does the trick if you're paleo and avoiding gluten/dairy. Would not repeat.
