Can substitute beef sirloin steaks, beef flap steaks, or beef flank steaks for beef filets mignons. You may use the Hummus (Hummus bi tahini) recipe on p. 32, the Shawarma spice recipe on p. 265, the Lebanese pita bread (Khobz Arabi) recipe on p. 234, and the Sesame paste (Tahini) recipe on p. p. 250. Marinate beef for at least four hours to overnight. Prepare pickled cucumbers and pickled turnips at least two days in advance.
