    Delicious mixed veg curry with loads of flavor! Made the following changes for ease/kid friendliness: subbed paprika for cayenne, roasted the cauliflower and potatoes instead of frying them. Would probably cut the amount of water added for simmering to 1.75-2 cups instead of 2.5 cups next time, but would definitely make again. Served with a simple toor dal, raita and garlic naan.
