    This was great, but it wasn't necessarily quick (I rushed it and the carrots were a little underdone). Made as per recipe, with all garnishes, but subbed homemade vegetable stock for some of the water. I used both carrots and Yukon Gold potatoes. The potatoes soaked up a lot of the liquid, so toward the end of the cooking time I added a cube or two more stock. Entirely optional, but I think it added to the flavor. Served with Naan and microwave brown rice in the little plastic cups (didn't have time to make basmati per the recipe). Great pantry dish - my carrots were a bit old, but still very good in this dish.
