    For my 1st try at chilaquiles, I came here for a pretty simple approach. I rescued "kinda stale" tortilla chips & a roasted jalapeno/tomato sauce from my freezer. I skipped the addition of fried/scrambled eggs but did add cooked Mexican chorizo & some beans. I enjoyed this topped with chopped red onions & tomatillo salsa and will definitely be looking at the other chilaquiles recipes in my books.
