    I soaked the lentils for an hour in a salt water brine; then rinsed thoroughly and cooked as directed. They turned out perfectly tender. I also added a splash of dry sherry after uncovering the pot at the end. This was delicious!

    I love this cookbook but didn't love this dish. I used the prescribed lentils du Puy, but they stayed hard despite longer cooking time. I've read that acid in tomato products can do this. Thoughts? Flavor was OK (added parm rind, bay leaf, replaced 2 c. water with homemade chicken stock).
