    I took a lot of liberties with this recipe. I discovered too late that i was almost out of Bulgur so I used farro instead. The recipe says to brown the onions and about a pound of squash in seven minutes. Impossible! Instead I put the squash in my convection oven to roast while browning the onions for at least 15 min. Instead of adding dried fruit with the grain, I added quick pickled raisins at the very end. No mint so I added green onion for looks. This will be good to take to work with leftover protein.
