    This potato gratin style dish with no cream or cheese is very good. Lots of things could replace the bacon (cubed pancetta, torn prosciutto or even chopped ham) & next time I would absolutely use fresh herbs (thyme/rosemary) in place of the dried called for. My pet peeve re: this style of dish is underdone potatoes at the end of the bake but no problem here....they were perfectly fork tender without any pre-steaming/boiling.
