    After a bit of tweaking, this soup turned out to be delicious. I tasted as I went along and ended up doubling the herbs and spices in the soup. It also needed more salt than called for. But when served with the pepitas, chopped red peppers and grated Monterey Jack cheese this soup really becomes something wonderful. I served it to a group of women friends and they loved it. I skipped the part about serving it in a pumpkin.
