    A back-pocket recipe for our household, and happily scales up for bigger batches (I only ever get 6 scones out of the base recipe.) I swap out about 10% of the AP flour for 00 flour to further enhance the flakiness. Spices are highly adaptable: dill, dry mustard powder, and smoked paprika are all common additions for me. As Nicola notes, extremely important to keep the butter in large pieces while cutting it into the flour. I rub the cold butter into the flour by hand, and have found that when I’m overzealous and follow the typical scone advice of “pea-sized pieces of butter,” the flakiness of these scones really takes a hit.
