Earl Grey tea cake from Everyday Cake: 45 Simple Layer, Bundt, Loaf, and Sheet Cakes (page 148) by Polina Chesnakova

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute orange zest for lemon zest.

The method here was a bit odd and I was wondering if this wouldn't turn out but it did. The cake is a bit flat but it tastes very good. The Earl Gray tea is subtle but delicious. I used orange zest.
