Coconut Bolognese with zucchini noodles from Vibrant and Pure: Healthful Recipes for Bright, Nourishing Meals (page 172) by Adeline Waugh

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute ground meat of your choice for ground beef, and lentil noodles for zucchini.

Nice alternative bolognese. Even better on pasta but the zucchini noodles are a good healthy option. Has a sweetness with the carrots, wine and coconut milk but seems lighter than traditional bolognese. Is not really a tomato sauce. Does take a while to chop the vegetables and to actually cook. Would definitely redo, especially in the Spring or Summer. Maybe try with ground chicken or turkey next time. The sweetness mellows the next day or so. Was a hit with the husband.
