    I've never prepared cauliflower as a "steak" and I thought this was a fantastic recipe. Love the combination of the roasted cauliflower on a bed of pureed cannellini beans with a side salad of celery with ranch dressing flavours. I didn't have all the herbs, and cheated with some packaged dry ranch dressing mix stirred into the yogurt. I am looking forward to trying more recipes from this cookbook.
