Allow to for marinate for 1-4 hours, and ideally overnight. Can substitute browning sauce for dark soy sauce; and pork shoulder, pork ribs, or pork loin roast for chicken leg quarters. Can use the all-purpose seasoning on page 239, and the jerk seasoning on page 238.
