Can substitute ground ginger, ground cinnamon, ground cloves, and ground allspice for gingerbread spice mix. You may use the Royal icing recipe on p. 242, and the Gingerbread spice mix recipe on p. 247. Refrigerate dough for at least one hour and up to overnight.
