    Very good. I made a few changes though: turkey instead of beef, cooked brown rice instead of uncooked long grain, and gochugaru instead of cayenne. Because my rice was already cooked, I reduced the chicken broth to just about a quarter cup and stirred it in with the scallion and then heated thru. I also stirred in the cheese off heat rather than layered it in when stuffing.

    We liked this quite a bit. Used jasmine rice since I don’t keep regular long-grain rice around. Also substituted Mexican oregano for the regular dried oregano, ground turkey for ground beef, and queso fresco for the mozzarella cheese.
