Can substitute Sriracha sauce for chilli sauce; salmon, trout, or kingfish for tuna; and Chinese cooking wine, grape juice mixed with honey, or apple juice mixed with honey for mirin.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I’ve never had a poke pool before so I don’t have a basis for comparison but I thought this was fantastic. I’m sure that there is lots of flex as long as you get the base elements of rice and marinaded fish. After I took the photo I thought to add some togarashi which was a great addition.
