    This was excellent and I’ll make again, maybe with smaller patties so they can brown up a bit more like smash burgers. Excellent seasoning

    Spot on: made a tasty sandwich that was much better than the McDonald's version. Used pork mince and added an extra 1/2 tsp of smoked garlic granules to the spice mix. Cooked the eggs individually without a ring and managed to get a reasonably shaped circle by immediately pushing the watery albumen in and cooking with the pan tilted to the side, and then spooning the hot fat over the top to set the whites whilst maintaining runny yolks. Only other changes I made was to hold the part-assembled sandwich ingredients in a 75°C oven during meat and egg prep, and to add a slice of back bacon and an extra slice of cheese. Definitely a keeper.
