    Marinate chicken 1-24 hours, and pickle red onion 1 hour. Can substitute cider vinegar for white wine vinegar, oranges for grapefruits, and crispy lettuce of your choice for cos lettuce.

    Crunchy and substantial, an excellent meal salad and that dressing is so good. I used chicken thighs because they are my favourite. Next time I’d cut the grapefruit segments up a bit so that I get a bit with each bite. Yum! Update: I made it again a few days later and roasted the marinaded thighs and cut the grapefruit up to get more bites with a bit of everything. Even more yum!
