Beans and rice require soaking at least 8 hours. Can substitute dried navy beans for dried adzuki beans, Swiss chard or baby spinach for kale, acorn squash or butternut squash for kabocha squash, button mushrooms for cremini mushrooms, and long-grain brown rice for short-grain brown rice.
