    Marinate 2-3 hours or overnight. Can substitute plain yoghurt mixed with milk for buttermilk, pure chili powder for cayenne pepper, chicken breasts or chicken thigh fillets for chicken tenderloins, and canola oil for vegetable oil.

    This was a delicious and more calorie friendly way of eating "fried" chicken. I served it with Nagi's Honey Mustard Sauce. Next time I would increase the amount of butter and oil in the baking pan. I also found coating the chicken with the dry mixture by shaking in a bag to be quite difficult to coat all of the chicken given the very wet marinade it had been in. I would try to just coat the individual chicken pieces by just pressing them into the dry mixture.
