Fish with pecan butter sauce and meunière sauce from Chef Paul Prudhomme's Louisiana Kitchen (page 54) by Paul Prudhomme

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Can substitute redfish for trout.

Very good, very rich! It all worked together even though it didn’t have lemon juice as in a standard Meuniere sauce. I squeezed some lemon juice on top, and because it was soooo decadent, I added some arugula greens in the side. Also served with “Basic Rice” from the same book

Used trout, pecan sauce really complimented fish. Skipped the meuniere sauce. Family loved it. Will repeat
