Apple olive oil cake (Torta di mele all'olio) from Cucina Povera: The Italian Way of Transforming Humble Ingredients into Unforgettable Meals (page 268) by Giulia Scarpaleggia

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute nectarines, apricots, or pears for apples.

Notably different from most apple cakes I’ve made, this one is intensely eggy, dense, and almost creamy in texture. Very pretty with the apples on top. I just brushed with a bit of honey syrup instead of making the apple syrup. Folks at work ate it up.
