Tuna spread with capers (Tonno sott'olio mantecato) from Marcella's Italian Kitchen by Marcella Hazan

  • canned tuna
  • capers

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Simple and outstanding. Because of the small number of ingredients, make sure you use high quality tuna in olive oil and european-style butter. I prefer this on toasted bread, to offer a contrast in texture with the creamy topping.

This is a good, easy and quick recipe. I would add more capers, though.

Full of flavor and very little effort to make. Using tuna packed in olive oil as the recipe suggests makes it luscious and creamy. Perfect for a picnic or a party. Water-packed tuna might make a lighter version, but not sure it would be as good. I'd rather eat less & keep the unctuousness!
