    Great way to make potatoes. Recipe is another classic from Marcella. Of note the 2 lbs of potatoes made it difficult to find a pan to accommodate all potatoes touching to the bottom. Perhaps our potatoes were dehydrated?.?.? Even so the recipe, like others in this book, is a bit light on directions as this book is not as thorough as others that have more complete directions. We fried the potatoes for 15 minutes (10-15 work) as there is no set time in the first frying step. Otherwise, we followed as directed and they came out crunchy. The garlic blackened - don't eat the garlic.
