Oran harira from The North African Cook Book (page 121) by Jeff Koehler

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Can substitute beef for lamb.

I liked this. It’s full of vegetables puréed together. The recipe called for lamb or beef, and I chose lamb. The lamb didn’t overpower the broth flavor, which tasted more of vegetables, but you do taste the meat when you add it back. I used cilantro, which wouldn’t have been noticed by those who dislike cilantro, but parsley is listed as a substitute. I added canned chickpeas when I added the lamb meat back. And I made rice to include. Unfortunately, my lemon was a bit older than I thought, so that didn’t make it in. It would have been a good addition. The recipe doesn’t say to add salt or pepper to taste at the end of the cooking, but you definitely want to. I added it after puréeing the broth. This would be an excellent meal if you have a sensitive stomach.
