Can substitute Jamaican jerk seasoning or Trinidadian green seasoning for Bajan seasoning, habanero pepper for Scotch bonnet pepper, dried thyme for fresh thyme, and soy sauce for Bragg liquid aminos. You may use the book's "Bajan seasoning" recipe on p.19, the "Jamaican jerk seasoning" on p.20, or the "Trinidadian green seasoning" on p.22.
