    Another success for the low carb challenge. A good light lunch with some salad. I changed it a bit; I didn’t have any cottage cheese (yuk) so I added an extra egg and a glug of milk. No spinach, so I used a few thawed frozen peas. Saved a bit of the Parmesan and sprinkled on top before grilling.
