    Can substitute other ground game meat for ground venison, and canned pinto beans for canned kidney beans. Can use the book's "Blonde game stock," p306, or can substitute chicken broth.

    I made approximately 1/3 recipe using 1 lb venison. Added a diced zucchini with the (small) poblano and onion. Used fire-roasted diced tomatoes with green chiles. Removed most of the chipotle seeds. Simmered for an hour on the stove instead of using a slow cooker (and I don't think 2 hrs would be enough in a slow cooker). We enjoyed it.
