    Can substitute dried pinto beans for dried white beans, beef for pork shoulder, other winter squash for butternut squash, and chicken stock or vegetable stock for pork stock. You may use the Tomato paste recipe on p. 39.

    I really enjoyed this stew, it’s rich and hearty. The long oven cook makes the pork really tender.
