    Easy with the whole thing prepped, cooked and served in 40 minutes. We substituted a packet of Beluga lentils to make it really special. Lots of plant points!

    I used black lentils that I accidentally overcooked. The resulting traybake was not the most appetizing looking because of the mushy lentils, but it tasted great. I would make this again.
