Can substitute dried black beans for dried pinto beans, goat cheese or sour cream for queso fresco, guacamole for avocados, tortilla chips for tortillas, tomato salsa for salsa verde, and lime juice for apple cider vinegar. Can use the "Salsa verde" recipe on page 252.
