Can substitute brown lentils, cooked Puy lentils, or cooked beluga lentils for black lentils; oil of choice for coconut oil; and the book's "Callaloo" or "Creamed coconut ackee" for "Spiced lentils." Recipe calls for frozen butter. Can use the all-purpose seasoning on page 239 and the jerk seasoning on page 238.
