The book's "Preserved lemon and garlic crispy chilli oil" called for in this recipe can be made in advance, or can be substituted with store-bought chilli oil. Can also substitute sunflower oil or rapeseed oil for vegetable oil, and can use salted or chilli and lime flavoured dried corn.
