Tomato-basil tortellini and sausage soup from Dinner Tonight - 100 Simple Healthy Recipes for Every Night of the Week (page 66) by Alex Snodgrass

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Excellent. I subbed chicken broth and half and half. Omitted salt and salted to taste at the end.

This is a delicous, hearty bowl that I made using spinach & gnocchi (in place of kale & tortellini). A mix of hot & mild sausage, fresh basil & a delux Italian seasoning (full of great extras like aleppo, fennel & dried roasted garlic) gives lots of great flavour and if you do eat dairy, a parm rind in the simmer is a good add-in. I always start with less broth (and did not use it all) and had intended to add the creamy ingredient (either the coconut milk as called for or more likely, a splash of 5% cream) but I completely forgot & we did not miss it at all. A repeat idea for sure.
