One-pan coconut-lime chicken and rice from Dinner Tonight - 100 Simple Healthy Recipes for Every Night of the Week (page 98) by Alex Snodgrass

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This was good but my rice was dry. I’m afraid I didn’t get the ratios right and may have needed more chicken broth. I will try it again though because Alex’s recipes are always bangers!

This is very good! Im a sucker for crispy chicken thighs and the rice is delicious and creamy with a slight kick from the peppers

This was sooooo delicious! I will be making it often. The rice was rich like a risotto but much less work.

This meal is so good! It’s easy to swap out ingredients if you don’t have something. I’ve made it several different ways. I would recommend adding chilis. It’s not very spicy.

We absolutely adored this - the rice was super flavorful. Adjust spice to your tastes - we actually added an extra chili and thought it was a good level of heat (no kids though).

I was disappointed with this one. I only used one chili and I thought that was too much spice. I also thought the sauce was a little too thick for the dish so that my rice didn't get crispy.
